The perfect truffle side dish is mashed potatoes. Who doesn’t like mashed potatoes?! Even better with some truffles.


  • 500g / 17.63oz potatoes
  • around 150ml / 5.07oz milk
  • around 30gr / 1.05oz unsalted butter
  • salt
  • approximately 70gr / 2.46oz fresh tuber Mesentericum

First, peel the potatoes, wash them, cut them into middle pieces, and boil them in a pot with hot water. Boil the potatoes until they are cooked. When they are ready, throw away almost all the water. The potatoes can soak the rest of the water so they don’t get harder. After that, put the unsalted butter and start mashing the potatoes with a special stick for mashed potatoes or with a fork. When they are well mashed, pour the warm milk while you mix all the ingredients with a wooden spoon. The puree has to be creamy and smooth. Then, put some salt to taste, and you are ready to grate your fresh truffles into tiny pieces. Mix it and put it on a side to get the truffle aroma.

In 10-15 min, you are ready to serve and enjoy the pleasant aroma of tuber Mesentericum.
