Which truffle is similar to the Tuber Brumale? – The most similar truffle to the Brumale truffles is Tuber Melanosporum. Also called the Black Diamond. It’s also similar to the Tuber Mesentericum with its strong aroma and shape. Both truffles have little holes on the outside.

Risotto with Tuber Brumale

The recipes with risotto rice and truffles are widely spread among the restaurants. The creamy texture of the risotto and the musky aroma of the Brumale make the perfect combination.

INGREDIENTS:

  • 400gr risotto rice
  • 1-2 tablespoons unsalted butter
  • One onion, chopped
  • 1/2 glass of white wine
  • chicken stock
  • salt to taste
  • 50gr unsalted butter
  • 100gr Tuber Brumale

PREPARATION:

First, you need to slice the truffles. You can do it with a truffle slicer. Then melt 1-2 tablespoons unsalted butter in a saucepan. Add the chopped onion and fry gently for about 2 minutes. After that, add the rice and stir until it’s coated with the butter. Pour the whole glass of wine, then add the stock, one ladle at a time. Add the stock until the rice reaches the ‘al dente’ stage. Then add salt to taste and remove the pan from the heat, cover, and rest for 5 minutes.

Add 50 grams of unsalted butter, stir all the ingredients, and add the Brumale slices on top.
